Description
We harvested sansho peppers from our own garden, blanched them to remove bitterness, removed the stems, and then preserved them in salt.

Our main store has obtained a business permit (Reiwa 3, July 12, Directive Taka-fuku-kan-28-36) based on the Food Sanitation Act from the Kita-Akita Public Health Center, and has registered for the manufacture and sale of salted products.

The peppers are preserved with approximately 35% salt content and are stored as is (they can be stored at room temperature if direct sunlight and high temperature/humidity are avoided).
The expiration date is 6 months from the date of manufacture.
We recommend transferring the product to a separate container for storage after opening.

To remove excess salt, take an appropriate amount, place it in a colander, and rinse it with water.

A popular dish using sansho peppers is chirimen sansho, a tsukudani (simmered dish) made with chirimenjako (small dried sardines). However, it's also delicious simmered with shiitake mushrooms, kelp, or fuki (Japanese butterbur) in soy sauce, sugar, sake, and mirin. Adding it to simmered fish or lightly pickled vegetables will also enhance their flavor.

Furthermore, you can make a delicious fried rice by stir-frying shirasu (whitebait) and rice with sesame oil, and then sprinkling sansho peppers on top. You can also enjoy the flavor of sansho by mixing it into sushi rice for chirashi sushi.
